Halal Baby Chicken

Baby chicken, also called poussin, is a young bird with soft, delicate meat that cooks far quicker than a full size chicken. One bird is a generous meal for one or a light meal for two. We prepare it whole for roasting or jointed into 2, 4, 8 or 12 pieces, with the skin on or removed.

Best for

• Whole roast or spatchcock
• Chicken karahi and tikka
• Charcoal grill and tandoor

Butcher's tip

Spatchcock the bird, rub with yoghurt, lemon and spices, then roast at 200°C for 30 to 35 minutes for crisp skin and juicy meat.
