About this product

Shoulder, or chuck, has a good amount of marbling and connective tissue, which gives a rich, beefy taste and a tender result when cooked slowly. It is one of the most versatile stewing cuts. We cut it whole or in large, medium or small pieces, with fat on or off.

Butcher's tip

Cut the shoulder into even sized pieces and cook with the lid on for around two hours so all of it becomes tender at the same time.
