Boiler chicken is a mature bird with firmer texture and a richer, more traditional taste than everyday chicken. It holds together in long cooking, which is why it is the favourite for desi curries, yakhni and shorba. We cut it to your choice of pieces and leave the skin on or off.

Butcher's tip

Give it time. Simmer gently for 50 to 60 minutes with the lid on and the meat turns tender while the gravy picks up a deep, savoury flavour.
