About this product

This free range bird is HMC certified and has a fuller flavour and firmer texture than standard chicken, the result of a slower, more active life outdoors. We prepare it whole for a special roast or cut into 4 to 12 pieces. Choose to keep the skin on or have it removed.

Butcher's tip

Roast whole at 190°C for about 20 minutes per 500g plus 20 minutes, basting twice, and rest for 15 minutes before carving.
