About this product
A French trimmed rack has the bones scraped clean for an elegant presentation, with a tender eye of meat along the rack. Each one is roughly 1.2 to 1.5kg. Roast it whole as a centrepiece or slice into cutlets for the grill.

Butcher's tip
Coat the rack with mustard and herbed breadcrumbs and roast at 200°C for 20 to 25 minutes for pink, juicy meat.
