About this product

Lamb brain has a very soft, creamy texture and mild taste. It is a traditional delicacy in Pakistani and Middle Eastern kitchens, best known in maghaz masala. Sold individually, it cooks gently in a short time.

Butcher's tip

Soak in cold salted water for 20 minutes, remove the thin membrane, then poach briefly before adding to the masala so it holds its shape.
