Mid wings are the middle joint of the wing, with two thin bones and the best ratio of meat to crispy skin. They cook evenly, look neat on a platter and are easy to eat with your fingers. A favourite for takeaway style wings at home.

Butcher's tip

Toss in a little baking powder and salt, chill uncovered for an hour, then bake at 220°C for exceptionally crisp skin.
