Back chops are cut from the loin and have a neat eye of tender meat with a little fat along the edge. They are ideal for grilling, frying or tandoori. Choose the thickness and fat level to suit how you cook.

Stand the chops on their fatty edge in the pan for a minute first to render the fat before cooking the faces.
