Halal Spring Lamb Shanks

Shanks are cut from the lower leg and wrapped in connective tissue that slowly melts, leaving meat that falls off the bone. Braised whole they make a hearty single portion. They can also be cut into pieces for nihari style dishes.

Butcher's tip

Braise covered at 160°C for two and a half to three hours in stock, tomatoes and spices, turning once halfway.
