Shoulder is the most flavourful lamb cut for slow cooking, with marbling that keeps the meat soft and juicy in a curry. We cut it to your preferred size. Choose fat on for maximum flavour or fat off for a lighter dish.

Use shoulder when a recipe simmers for more than an hour; leaner leg can turn dry where shoulder only improves.
