Bitter leaf, known as onugbu in Igbo and ewuro in Yoruba, gives ofe onugbu its well known gentle bitterness. Many cooks also add a handful to egusi soup.

How to use it

Wash and squeeze the leaves in clean water a few times to soften the bitterness to your taste before cooking.
