Ravaya

Ravaya are small round aubergines that hold their shape when cooked. They are traditionally slit and stuffed with a spiced masala, then cooked slowly until tender.

Kitchen tip

Cut a cross into each aubergine without separating the base, fill with masala and cook covered on low heat.
