Halal Chicken Breast Butterfly

Butterflying opens the breast into one wide, even fillet, so it cooks in half the time of a whole breast and never ends up dry at the edges. It takes on marinades quickly and lies flat in a pan or on the grill. Ideal when you want a proper piece of chicken on the plate in under fifteen minutes.

Butcher's tip

Marinate for at least 30 minutes, then cook in a hot griddle pan for four to five minutes each side without moving it, for neat char lines.
