We cut skinless legs into small pieces on the bone, the traditional cut for chicken karahi and home style curry. The bones add flavour to the sauce, and the small size means everything cooks evenly. It takes the work out of preparing a whole bird.

Cook karahi on a high heat with tomatoes, green chilli and ginger, stirring often, until the oil separates from the masala.
