Cutlets come from the rack and are the most elegant of lamb chops, with a long clean bone and a tender eye of meat. They cook quickly under the grill or in a pan. Choose your thickness and whether you want the fat left on.

Butcher's tip

Marinate in yoghurt, garlic and garam masala, then grill for three to four minutes each side so the centre stays slightly pink.
