Cassava, also called yuca or mogo, is a starchy root with a mild, slightly sweet flavour. It is boiled, fried into chips or pounded into fufu across Africa, the Caribbean and South Asia.

Peel off the thick brown skin and pink layer, remove the woody core, and always cook cassava thoroughly before eating.
